However, in the West and only the leaves are eaten, and the stems are discarded; while both leaves and stems are eaten in the East. Moreover, the leafy greens are also prepared differently. In the West,the curly kale is braised with other whole foods. As for Western spinach, the leaves are pan-cooked while the leaves are discarded.
